"From somewhere at the bottom of a passage, the smell of roasting coffee- real coffee, not Victory Coffee- came floating out into the street. Winston paused involuntarily. For perhaps two seconds he was back in the half-forgotten world of his childhood. Then a door banged, seeming to cut off the smell as abruptly as though it had been a sound" (70).
The "Victory" items - the most discussed being coffee, gin, and cigarettes - play a prominent role in Nineteen Eighty-Four. Orwell chooses these three items in particular to be banned because they all have the ability to alter the human senses. Winston had said earlier that the force emitted by Big Brother was "persuading you, almost, to deny the evidence of your senses" (69). By eliminating these items and replacing them with "Victory" items conjured up by the Party themselves, the Party dulls the human senses and therefore makes the humans easier to control. As seen here, Winston's senses are deadened causing the smell to react as a sound.
